Dixie Leigh’s Chocolate Chip Delights

For a year, Dixie has been providing fellow wrestlers and even fans her baked goodies, and now you can make them in your own home.


Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/4 c butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups of your favorite chocolate chips (ie White, semi-sweet, milk, butterscotch, ect)
1 cup chopped nuts, if you want them,

Directions:
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto baking sheets* lined with parchment paper. It makes for easy pick up and clean up.

BAKE for 7-9 minutes or until they are ever-so-slightly underdone in the center. (they will continue to cook in their own heat and you end up with nice soft cookies) Cool on baking sheets until warm, and then remove to wire racks to cool completely. If they cool off too much they could stick to the pan.

*sometimes I like to roll the tablespoon of dough into a ball and roll it in sugar sprinkles and then put them on the pan to bake. It makes perfectly round cookies with a little something extra.
